While
we work to perfect the art of winemaking using our estate Rhone
varietals, nature is really the greatest factor in what we do. Just
like farmers, winemakers become meteorologists during harvest. Our
passion drives us to stay up at night for the latest forecast on local
channels, search internet reports for weather, and make predictions on
what decision will result in the best wine quality.
This September has been a challenge for winemakers, but also very
rewarding. Even though we have had a few days of wet weather, we have
been lucky to dry out in the vineyard. The recent cooler
temperatures have been allowing extra hang time on our Grenache,
Mourvedre, and Counoise. This is important because we are getting more
tannin ripeness and better flavor concentration as the time on the vine
continues. Our early varietals, Viognier, Syrah, Roussanne, Marsanne,
Grenache Blanc, and Rolle came in earlier than expected this year and
have finished their fermentations with amazing bouquet. Fun fact: Bouquet is produced as a result of the yeast fermentation. Aromas are the result of the grape source.
Our Coeur du Terroir Blanc was co-harvested on September 6. We
fermented it in stainless steel at cool temperatures to capture the
wonderful stone fruit aromas that characterize this blend. Complex
white wines take some time, usually 4-6 months, to integrate their
flavor profile. When we release the wine, it is ready to be enjoyed
fully for all of its flavors and generous mouth feel.
